Lemon Poppy Seed Cake Recipe c/o Amy Hatfield

Hopefully this recipe is visible. I've heard that my text is invisible, maybe that's why my blog seems to be a ghastly ghost town* for comments... (or maybe it's just boring, alas I hope my life isn't that boring, it sure doesn't seem so to me)!
*Way too much Scooby Doo these days, actually who could ever get enough of Scooby & the gang? We love a good mystery around here!

INGREDIENTS
1/8-1/4 cup poppy seeds (depending on preference)
1/4 cup milk
1 (18.25 ounce) package lemon cake mix
1 (3.4 ounce) package instant lemon pudding mix
1 cup water
1/2 cup vegetable oil
4 eggs


DIRECTIONS

Soak poppy seeds in milk for 2 hours (opt). Preheat oven to 350 degrees F (175 degrees C).

Grease and flour a 10 inch Bundt pan.

In a large bowl, stir together cake mix and pudding mix. Make a well in the center and pour in water, oil, and eggs. Beat on low speed until blended. Scrape bowl, and beat 4 minutes on medium speed. Blend in poppy seed mixture. Pour batter into prepared pan.

Bake in the preheated oven for 45-60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

Summer Time Goodness

So, my friend Amy has the cutest stuff on her blog. She makes gorgeous bags and such, which everyone should take a look at and consider purchasing to keep her addiction to beautiful fabric affordable as she does such beautiful work with it! Anyhow, she recently posted about one of the greatest boxed cakes there is, Funfetti, and I thought I ought to send a shout out to one of my newest favorite cakes too!
The cake is a lemon-poppy seed cake that I got off of my cousin-in-law's blog www.cafeamy.blogspot.com (coincidentally, her name is Amy too). It is to die for and you should try it out as soon as you can! I even went out and bought a bunt pan just for this cake and I am so glad I did because it is going to get a lot of use! It is the best, lightest-tasting, summer goodness I've had in a long time and I'm temped to make one every week, hey it is so good maybe twice a week!!! If you try it tell me what you think, I absolutely love it! If you make a trip out here this summer I'll make one for you...or this winter, or really anytime...it is that good!!!!!!!! I'm beginning to salivate just thinking about it's moist, lemony freshness. Maybe I'll make one this weekend, yes I think that would be a wonderful treat! Derek will be very happy!!!
